Slow Cooked Chicken, Prawn and Dumpling Soup

Ingredients

  • 2 chicken breasts or 4 chicken thighs
  • 600 grams prawns
  • 1 red chilli (chopped finely)
  • 2 carrots (sliced finely or julienne)
  • 3 Pak Choy
  • Handful of beans
  • 3 tsp ginger (grated or julienne)
  • 2 tsp garlic (grated)
  • 1/3 cup soy sauce
  • 1/4 oyster sauce
  • 2 L chicken stock
  • 500 grams Prawn dumplings
  • 250 grams Vermicelli noodles

Method

  1. Place all the liquids, the ginger and garlic to the slow cooker. Slice the carrots, beans, chilli and chicken, then add to slow cooker. Give everything a mix.
  2. Cook on low for 4 – 5 hours
  3. 30 minutes before serving add Pak Choy, prawns and dumplings
  4. 10 minutes before serving add noodles. Serve with crunchy bread or buns
